Having been plant-based for over 20 years, Chef Je Wallerstein is deeply passionate about sharing cuisine that celebrates plants and showcases sustainable dining. Hailing from the Boston area, Je trained in kitchens in Melbourne, Berlin, Copenhagen, and London before settling in Austin in 2020. Through her global orientation and personal culinary mentors, Je endeavors to re-imagine and challenge assumptions of what plant-based, sustainable cuisine can be. In the pursuit of sharing their passion, in 2023 Je and her husband Silas Wallerstein independently opened Fabrik – a plant-based micro tasting restaurant. Fabrik’s menus are consciously crafted, inspired by the seasons, and curated to celebrate and showcase the diversity of plant-based cuisine while utilizing local produce and provisions as much as possible.

Since opening their doors, Fabrik has been included in The Infatuation’s Top 25 Restaurants, Eater Austin’s Essential 38 Restaurants, and Yelp’s Best New Restaurants in the South lists. Fabrik was selected as Austin Monthly’s Best Vegetarian/Vegan Restaurant in 2024 and was awarded 5 Radishes by the We’re Smart® Green Guide.
