Colter got into cooking after moving to Denver and experiencing a career change after college. He immediately fell in love with just how much there was to learn and how many intimate moments were involved in every day. From slicing herbs, to braising beef cheeks, to visiting the farmers market, every day was full of beauty and wonder. He continued to fuel my desire to learn and connect with others by moving to northern Idaho, Portland, Boulder, and finally Austin.

In Portland Colter had the pleasure of working at some of the most wonderful restaurants he had ever come across. Proud Mary, Le Pigeon, Tusk, and Nuvrei. All made a huge impact on him and the current food style that he calls his own. In October 2020 he moved to Boulder to work on a farm during the pandemic harvest season. It was an incredibly humbling and wonderful experience. His appreciation for farming and thoughtful sourcing had never been higher. He was then brought to Austin to open and be the head chef of an New York based Aussie cafe called Two Hands. Since February of 2022 Colter has transitioned to working on his own concept here in Austin.
