
First among the many exciting new additions to this year’s Field Guide Festival is a taco omakase, helmed by the incredible Joseph Gomez of Sana Sana Taqueria (formerly Con Todo).
In partnership with Hannah Beall of the Central Texas Food Bank Garden, this unique take on an omakase experience brings us so much joy to share with you. So much in fact, we chatted with Joseph about participating in Field Guide, the evolution of his work, the importance of migrant workers, and storytelling through cuisine.
Field Guide: Can you tell us a little bit about Sana Sana, and the evolution of Con Todo?
Joseph: The name “Sana Sana Taqueria” is inspired by the phrase “Sana Sana colita de rana.” Think of it as a comforting phrase you’d hear growing up — so it’s a fitting theme for a project about healing, resilience, resistance and connection to my roots.
Sana Sana is my way of delving deeper into storytelling and advocacy for migrant workers, weaving together food and narrative through the lens of Chicano futurism and sabores sin fronteras (flavor without borders). It challenges existing systems, envisions a more just future, and celebrates the enduring spirit of our communities.
Field Guide: What is your driving motivation behind the food you make?
Joseph: Being able to tell stories of where I am from along the fronteras of Texas and Mexico. I also just love to cook for the people I care about the most.
Field Guide: What is important to you about the ingredients you use to make your food?
Joseph: Ingredients bring awareness to the people who harvest our food. They can serve as a celebration of the great things that represent the region I am from.
Field Guide: Do you have any teasers for the Field Guide taco omakase?
Joseph: I am excited to partner with Hannah and highlight the products she has to offer. So expect vegetable focused bites, RGV influence, maiz criollook, and tecnicas Mexicanas.
